Remove your Simões Azeitão PDO from the fridge 2 hours in advance in winter, 30 minutes in summer. It should be served at room temperature so that it recovers all its sensorial qualities, aroma, taste and texture.
Place the cheese on a base. It should be cut in half so that you can enjoy the unctuous paste slowly deforming. Then cut into small slices and serve.
If you want to eat it quickly, you can open the cheese by removing the “lid” and serving it with a spoon.
